Pan Seared Grey Mullet

In support of local farmers, this dish features the Grey Mullet from Jurong Fish Farm. Paired with a homemade olive tapenade that give this dish a punch of saltiness balanced by the sourness of white balsamic sauce vierge.

Mimic

Many beautiful forms are inspired by nature including food.  1-Group’s Pastry Chef, Chef Jasmin, will share some visuals and inspiration behind some of her dessert creations that mimic nature. She will also conduct a simple demonstration on how to put together a terrarium dessert made of chocolate soil, matcha moss, chocolate twigs and fried herbs.

Specially for the event, Chef McDonald will create a garden-themed dish which is easy and fun to make. Healthy, colourful, crisp and refreshing, Chef McDonald will be adding secret ingredients to make the dish unique. The dish will be filled with fresh spring veggies and edible flowers for a special twist.

Home Cooking with Lilian Kwok of Pasir Panjang Nursery

Many people love growing herbs and harvesting them for home cooking. Lilian will be demonstrating the preparation of both black and green chincau (grass jelly). She will also be sharing a simple recipe for stir-fried winged beans.

Let Chef Felix and Chef Wendy of 1-Group take you through the types of edible leaves that we can find in Singapore and more specifically, the edible garden at The Summerhouse. The chefs will show how these edible herbs and flowers are used to complement and enhance the flavours and presentation of their dishes.

Always wondered how gin was invented? Mixologist Khairul Salim will be presenting the history, development and origin of Gin and the different natural botanical found in NB and Bombay Gin. Watch as he shakes up three curated gin cocktails.
